vegan, easy, gluten-free
This is one of the simplest and most delicious cakes ever. Spicy, salty, lusciously chocolatish, and it takes 30m to make. What not to like?
Tools: blender, oven, kettle/pan for boiling water, mixing bowl
Ingredients: 2c dates, hot water, 1/2c peanut butter, 1/3c cocoa, 1/2c chopped almonds, 2tbsp melted coconut oil, salt, cayenne pepper.
- Preheat oven to 180°C
- Soak dates in hot water for 10m, then remove the water to separate dish. Squeeze the dates well, to remove excess water.
- Mix dates well. Then add 1/4c of daty-water and blend.
- Add coconut oil, peanut butter, cocoa, almonds, salt and cayenne pepper and blend well together. Food processor would be great, but you can do it with a blender and by hands.
- Bake at 180°C for 15m then cool for at least 20m before cutting.
